Japanese eel, Anguilla japonica. The Japanese eel and other eels live in fresh water and estuaries where they feed and grow as yellow eels for a number of years before they begin to mature and become silver eels that migrate to the sea spawn. The spawning area of this species is in the North Equatorial Current in the western North Pacific to the west of the Mariana Islands. The Japanese freshwater eel produces a fluorescent protein. This protein is the basis of a new test to assess dangerous blood toxins that can trigger liver disease. The Japanese eel is an important food fish in East Asia, where it is raised in aquaculture ponds in most countries in the region. In Japan, where they are called unagi, they are an important part of the food culture, with many restaurants serving grilled eel, which is called kabayaki. Eels also have uses in Chinese medicine. L'anguille japonaise et d'autres anguilles vivent dans les eaux douces et les estuaires, où elles se nourrissent et se développent comme des anguilles jaunes pendant plusieurs années avant de devenir matures et de devenir des anguilles argentées migrant vers le frai. La zone de frai de cette espèce se situe dans le courant équatorial nord, dans le Pacifique nord-ouest, à l'ouest des îles Mariannes. L'anguille d'eau douce japonaise produit une protéine fluorescente. Cette protéine est la base d'un nouveau test visant à évaluer les toxines sanguines dangereuses pouvant déclencher une maladie du foie. L'anguille japonaise est un poisson de consommation important en Asie de l'Est, où elle est élevée dans des étangs d'aquaculture dans la plupart des pays de la région. Au Japon, où ils sont appelés unagi, ils constituent une part importante de la culture alimentaire. De nombreux restaurants servent de l'anguille grillée, appelée kabayaki.
